Die Türen zur Oberen Halle des Alten Bremer Rathauses öffnen sich und etwa 100 auswärtige Gäste nehmen zusammen mit je etwa der gleichen Anzahl kaufmännischer und seemännischer Mitglieder von Haus Seefahrt an der festlich geschmückten Tafel in Form eines Dreizacks Platz, dem Kennzeichen des Meeresgottes Neptun. Zur Bremer Schaffermahlzeit werden nur nicht in Bremen ansässige Gäste geladen, und das auch nur einmal im Leben, was die Teilnahme an der Schaffermahlzeit für die Gäste zu einem einmaligen Erlebnis macht. Sie sollen Gutes von der großen Gastfreundschaft, von Tradition und Werten der Hansestadt mit zurück in ihre Heimat nehmen. Drei Kaufleute, die zwei Jahre zuvor als Schaffer gewählt worden, richten die Mahlzeit auf ihre Kosten aus. Ihnen zur Seite stehen je zwei Kapitänsschaffer. Während der Bremer Schaffermahlzeit sitzt man etwa vier Stunden zu Tisch und hört zahlreiche Reden. Die Speisenfolge ist seit Jahrhunderten unverändert und nach heutigen Maßstäben keinesfalls sehr lukullisch aber recht umfangreich. Es gibt Hühnersuppe, Stockfisch und das Bremer »Nationalgericht« Braunkohl mit Pinkel, sowie Kalbsbraten, Käse und Obst. Besonderer Aufwand wird jedoch traditionell mit den zur Schaffermahlzeit gereichten Weinen getrieben und das Sonderetikett des Hauses Seefahrt ist eine begehrte Prämierung, wertvoller als manche Goldmedaille.
